Taco Casserole
This taco casserole recipe is simple and easy to make. It's so versatile could be served with tortilla chips, cilantro rice, tortillas, or a salad.

- 1 lb. Ground Beef
- 1 can Black Beans
- 1 package Mexican Cheese
- 1 package Taco seasoning
- 1 Jalapeno sliced
- 1 Red bell pepper diced
- 1 Yellow onion diced
- 1 Green bell pepper diced
- 1 Juice of lime
- 1 Avocado diced
- 1 Cherry tomatoes diced
- 3/4 cup Salsa
- 3 Tbsp. Sour cream garnish
- 2 Tbsp. Grapeseed oil
- 4 Tbsp. Finely chopped cilantro
Heat oven to 350 degrees F.
Using an oven-friendly pan over medium heat cook the ground beef. When no longer pink, add the taco seasoning and cook as instructed on the package. Then, remove from the pan.
Add 2 tablespoons of oil to the pan., Then, cook the diced onions, green, and red bell peppers until translucent 4-5 minutes.
While cooking, drain the black beans and wash off any remaining liquid.
Put the black beans, cooked ground beef, and half of the lime juice into the pan with the onions and peppers. Next, mix the ingredients together and then add the salsa.
Spread the Mexican cheese over the entire dish. Transfer to the oven. Allow to cook for 20 minutes or until the cheese is fully melted and bubbly.
Remove from the oven and allow to cool for 2 minutes.
Add on top the sliced jalapenos, the diced avocado and cherry tomatoes. Squeeze the other half of the lime juice over the entire dish.
Serve with the finely chopped cilantro and sour cream.
