Spinach stuffed mushrooms are the perfect appetizer or tapas theme gathering. It’s bite-size, tasty, creamy, cheesy, vibrant, and did we mention delicious?! This mushroom is filled with spinach of course, cream cheese, garlic, and sprinkled on top with mozzarella cheese.

Mushroom Ingredients

  • Mushrooms the best mushrooms for the job are portobello.
  • Spinach – fresh spinach is ideal, just throw it in the pan!
  • Cream Cheese – a little brick cream cheese, never hurt nobody. But please stick with full fat for this recipe.
  • Salt n’ Pepper – season to taste with some freshly ground black pepper and a little kosher salt.
  • Garlic – Sautéed or roasted garlic gloves are the perfect touch to these stuffed mushrooms. If you’re a total garlic fanatic feel free to add in a little more garlic.
  • Mozzarella Cheese – Fresh shredded mozzarella cheese is added on top as the final touch before baking.

How to make Spinach Stuffed Mushrooms

Alrighty….Let’s make these amazing bad boys!

  1. First, preheat the oven to 375 degrees F. Then, line a large baking sheet with parchment paper.
  2. Remove the stems from the mushrooms. Place the top part of the mushrooms on the lined baking sheet.
  3. Mince the mushroom stems and garlic.
  4. Heat a large skillet. Melt a tablespoon of unsalted butter. Next, add the mince mushroom stems and garlic into the pan. Cook for ~2 minutes.
  5. Stir in spinach. Cook the spinach until it wilts.
  6. Add cream cheese, salt, and pepper to the pan. Stir the mixture until the cream cheese is melted and everything is well combined.
  7. Add a spoonful of the spinach mixture to each mushroom top.
  8. Sprinkle fresh mozzarella cheese on top of the stuffed mushrooms.
  9. Bake for 10-15 minutes or until nice and golden brown. Enjoy!

For more interesting non-basic stuffed mushrooms. Try adding crispy bacon on top for a salty crunchy component. Another great option is to spice it up with hot peppers or cayenne pepper. Not a huge fan of spinach? Stuff the mushrooms with crabmeat and a mixture of white cheeses such as parmesan or asiago. Want to make it vegan friendly? Ingredients
  

  • 10 Portobello mushrooms
  • 1 tbsp Unsalted butter
  • 2 Garlic gloves minced
  • 4 oz Cream cheese
  • Ground black pepper
  • Kosher salt
  • 2 cups Fresh spinach
  • 1/4 cup Mozzerella Cheese
  • 1 tbsp Parsley garnish

Instructions
 

  • Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper.
  • Remove the stems from the mushrooms. And place the top half the mushrooms onto the baking sheet. Mince the stems.
  • In a medium size pan, melt the unsalted butter. Add in the minced stems and garlic. Stir and saute for 2-3 minutes.
  • Add in the fresh spinach, cook until it begins to wilt. Season with salt and pepper.
  • Next add the cream cheese, season to taste. Stir the cream cheese until it melts and is well combined with the spinach.
  • Add a spoonful of the spinach mixture to each mushroom top. Sprinkle mozzerella on top of each stuffed mushroom.
  • Bake for 15 minutes or until golden brown.
