The Art of Simple Ingredients

Life is but a dream, not if, but when, we keep things simple. Is that catchy? Nothing makes us happier than simple and clean recipes. These potatoes can be ready in a jiffy! Below are the deets to all thats simplistic (for this recipe):

  • Fingerling Potatoes: Well what’s a potato recipe without the potatoes? Am I right…. The star of the dish is our gorgeous fingerling potatoes, so please take the time to show them as much love as possible before roasting (i.e., talking to them, cutting them, messaging them with EVOO, seasoning them, can I get and AMEN!).
  • Garlic: Adds that flavor, FLAVOR, just makes everything taste sooo good.
  • EVOO (Extra Virgin Olive Oil): Provides the potatoes the needed crunch, love and respect! Also acts as the glue in this recipe making sure the salt & pepper stays in place (on the potatoes).
  • Fresh herbs: The herbs add a pop of color and keep the potatoes bright and earthy.
  • Seasoning: As mentioned in a previous section, salt and pepper is a total MUST! Please please oh please don’t forget those seasonings. Bland food is not the way.

Making Roasted Fingerling Potatoes

Alright…alright…alright (in my Matthew McConaughey voice). Who’s ready to make some roasted fingerling potatoes? Just follow along and let’s get cooking!

  1. Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
  2. In a large bowl add melted butter, EVOO, garlic cloves, thyme, ½ teaspoon of black pepper, and 2 teaspoons of kosher salt.
  3. Toss in the fingerling potatoes.
  4. Transfer the potatoes to the sheet. Arrange the potatoes in a single layer (cut-side) down.
  5. Roast for 25-30 minutes. Flip halfway through.
  6. Top off the potatoes with chives, salt, and pepper. Serve hot.

  • lb. Fingerling Potatoes cut in halve
  • 4 Garlic cloves minced
  • 2 Tbsp. Unsalted butter melted
  • 3 Tbsp. EVOO
  • 4 sprigs Fresh thyme
  • 3 Tbsp. Chives freshly chopped
  • Freshly ground black pepper
  • Kosher salt

Instructions
