Combine the butter and sugar in a bowl. Using a hand mixer, mix until smooth approximately 4 minutes.
Scrape down the sides of the bowl and add in the eggs, one at a time. Followed by the vanilla extract and beat for 4-8 minutes.
Add in the dry ingredients: flour, salt, baking soda, and baking powder. Mix until the cookie dough comes together.
Fold in the lemon zest and sprinkles.
Scoop the cookie dough onto a lined baking sheet with parchment paper (be sure the cookies are 3-4 inches a part). Refrigerate for 2 hours.
Preheat the oven to 350 degrees F.
Bake the cookies until golden brown, approximately 12-16 minutes. Enjoy!
