  • Butter
    • We recommend the use of unsalted butter for this recipe. The main reason being it is hard to know the exact amount of salt added to salted butter. So in order to prevent that unknown factor, just use unsalted butter and control the salt amount yourself. Also, make sure the butter is softened (aka room temperature).
  • Eggs
    • The eggs act as the binding agent for the cookies. Again just be sure to use room temperature eggs, which helps with homogenizing with fat [aka butter].
  • Lemon
    • Cut some of the sweetness to the cookie from the sprinkles and adds a touch of brightness to the cookies.
  • Light Brown Sugar
    • Sugar makes this recipe worth while AND the use of light brown sugar adds some much needed molasses color.
  • Sprinkles

Birthday Cake Cookie

A birthday cake cookie is icing on the cake…without the cake! It's chewy and makes you want to smile.

Ingredients
  

  • 1 cup Unsalted butter RT
  • 2 Large eggs RT
  • ½ cup Sprinkles
  • cup All purpose flour
  • 1 tsp Kosher salt
  • ½ tsp Baking powder
  • ¾ tsp Baking soda
  • 1 tsp Fresh lemon zest
  • 2 tsp Vanilla extract
  • 1 cup Sugar
  • ½ cup Light brown sugar

Instructions
 

  • Combine the butter and sugar in a bowl. Using a hand mixer, mix until smooth approximately 4 minutes.
  • Scrape down the sides of the bowl and add in the eggs, one at a time. Followed by the vanilla extract and beat for 4-8 minutes.
  • Add in the dry ingredients: flour, salt, baking soda, and baking powder. Mix until the cookie dough comes together.
  • Fold in the lemon zest and sprinkles.
  • Scoop the cookie dough onto a lined baking sheet with parchment paper (be sure the cookies are 3-4 inches a part). Refrigerate for 2 hours.
  • Preheat the oven to 350 degrees F.
  • Bake the cookies until golden brown, approximately 12-16 minutes. Enjoy!
