Ingredients
  

  • lb. Fingerling Potatoes cut in halve
  • 4 Garlic cloves minced
  • 2 Tbsp. Unsalted butter melted
  • 3 Tbsp. EVOO
  • 4 sprigs Fresh thyme
  • 3 Tbsp. Chives freshly chopped
  • Freshly ground black pepper
  • Kosher salt

Instructions
 

  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
  • In a large bowl add melted butter, EVOO, garlic cloves, thyme, ½ teaspoon of black pepper, and 2 teaspoons of kosher salt.
  • Toss in the fingerling potatoes.
  • Transfer the potatoes to the sheet. Arrange the potatoes in a single layer (cut-side) down.
  • Roast for 25-30 minutes. Flip halfway through.
  • Top off the potatoes with chives, salt, and pepper. Serve hot.
