Roasted Fingerling Potatoes
Roasted fingerling potatoes can hit the spot each time! It's colorful, tasty (thanks to EVOO and garlic), and a quick side dish to any dinner.

- 1½ lb. Fingerling Potatoes cut in halve
- 4 Garlic cloves minced
- 2 Tbsp. Unsalted butter melted
- 3 Tbsp. EVOO
- 4 sprigs Fresh thyme
- 3 Tbsp. Chives freshly chopped
- Freshly ground black pepper
- Kosher salt
Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
In a large bowl add melted butter, EVOO, garlic cloves, thyme, ½ teaspoon of black pepper, and 2 teaspoons of kosher salt.
Toss in the fingerling potatoes.
Transfer the potatoes to the sheet. Arrange the potatoes in a single layer (cut-side) down.
Roast for 25-30 minutes. Flip halfway through.
Top off the potatoes with chives, salt, and pepper. Serve hot.
